Low Carb Holiday Appetizer with Stella Cheese

Therefore, you can only imagine how busy things become this time of year. From family gatherings to visiting with friends, my house is the hub of it all. Laughter is shared, wine is plentiful, and appetizers are passed around like hotcakes.

My newest favorite holiday appetizer recipe for our holiday gatherings are these amazing Parmesan Crisps. Featuring fresh Stella brand cheese, with hidden carrots and zucchini, these crunchy rounds are tasty, yet low-carb and full of the good stuff. Win, win, right?

Plus, they are super simple and fast to make, and kid-friendly should you have little helpers in the kitchen! And, with only 4 simple ingredients, these come together in a pinch.

Parmesan Crisps

Ingredients:

Directions:

  1. Preheat oven to 375 degrees.
  2. Grate Stella Parmesan Cheese into long strips.
  3. Grate carrot and zucchini into like-sized strips.
  4. Pat down carrot/zucchini mixture with a towel to remove excess moisture.
  5. Mix cheese, carrots and zucchini, two parts cheese to one part veggie mixture.
  6. Place small piles of mixture onto a parchment paper-lined cookie sheet.
  7. Gently pat down piles into more of a chip shape.
  8. Sprinkle with garlic salt.
  9. Bake for approximately 8 minutes, or until outer edges brown and the middle of your crisps are bubbling.
  10. Cool completely before enjoying, or store in an air tight container for a snack for later.

Not only are these crisps super easy to make, but everyone, including my kids, enjoyed them. I loved the fact that I was managing to sneak a couple veggies into their diets.

Making these again next time, I have to say I would certainly double the batch due to how fast these disappeared. Also, due to the rich, nutty flavor of the Stella Parmesan cheese, you could probably also skip the garlic salt and still have some amazing flavor!
